8 Ways to Use Up Leftover Rice - Zara Hat Ke

I have the hardest time nailing the exact amount of rice I need to make. Some days, my family demolishes a serving dish of rice, wishing there were more. Other days, that same amount of rice is just way too much. Luckily, there are lots of delicious ways to use leftover rice!

If you want to just use last night's rice as today's side dish, you can easily reheat it.

Leftover rice can get a bit hard in the fridge, especially if it has been more than one day since you made it. When you reheat, just add a bit of water - just a few tablespoons - to soften it back up. You can reheat in the microwave or on the stovetop.

In the microwave, just add your water then the rice to a microwave-safe dish. Cover, and heat on high for two minutes. Microwaves vary, so if your rice isn't heated through, just give it a stir, and heat for 30 seconds at a time until it's warmed back up.

If you're reheating on the stove, just add the rice and water to a pan big enough to hold it. Stir constantly, adding splashes of water as needed until the rice is heated through.

Want to do something a little bit more exciting with your leftover rice? Try these recipes!

1. Leftover Brown Rice Salad

Sun dried tomatoes, button mushrooms and crunchy cashews or sunflower seeds make this rice salad flavorful and filling. If you can, mix this up when you're putting away your leftovers, so the dressing has a chance to soak into the rice overnight.

2. Brown Rice Pudding

This is a healthier version of a classic leftover rice recipe. It's packed with protein and fiber and makes a lovely breakfast or dessert.

3. Sushi Bowl

Leftover rice isn't really ideal for sushi rolls, but it's perfect for making a sushi bowl, like this one, starring adzuki beans. Turning plain rice into sushi rice is as simple as adding two ingredients, and their addition softens the rice, too! The recipe calls for brown rice, but you can also use white rice, if that's what you have in the fridge.

4. Pineapple Fried Rice

Fried rice is another classic way to use leftover rice, but this version has a fruity twist! It's packed with pineapple and veggies and is perfect alongside your favorite stir fry.

5. Pesto Rice

Earthy pesto stirred into warm, leftover rice is a hearty base for a plant-based meal. Cadry has lots of suggestions for how to build your pesto rice into the bowl meal of your dreams!

6. Chili Soup

This brothy bowl of goodness is totally meal-worthy with some leftover rice thrown in. Mel (the recipe author) says, "If you happen to have some leftover grains hanging about (think rice, millet, farro, sorghum, quinoa etc), then feel free to throw them in about ten minutes before serving. It's a great way to use them up and it makes it even heartier."

7. Broccoli Rice Casserole

Creamy, cheesy cashew sauce and plenty of broccoli team up with cooked rice in this comfort food casserole. It's a great side dish to go with your favorite plant-based protein.

8. Roasted Veggie and Wild Rice Buddha Bowl with Creamy Lemon Herb Sauce

Sophia says that you can make this leftover rice recipe with the wild rice, as listed, or whatever leftover rice you have in your fridge. It's topped off with cozy roasted veggies and a healthy dollop of almond-based lemon herb sauce................
